You can’t beat beets for delicious, healthy eating

During this pandemic, we are told to really eat healthy, get more vitamins D and C, get more exercise, and follow the rules. Many of us who work from home have to think about more than one meal a day, especially when children are studying remotely. It can be boring to eat the same thing, but with a little imagination and help from the grocery store, you can create some delicious dishes.

How about a delicious sunny yellow beet salad for lunch? Even kids will like this one because it tastes sweet rather than the earthy taste associated with beets.

YELLOW BEET SALAD

For the dressing:

1/4 c. Extra virgin olive oil

Juice and zest of 1 large lemon

3 T. sweet cucumber juice

1 t. dry mustard

Salt to taste

For the salad:

4 small yellow beets, cooked, peeled and cut into rounds

1 scoop of mozzarella, cut into cubes or pieces

1/4 c. shredded rocket

1/2 c. Radicchio, torn into bite-sized pieces

Black sesame for garnish (optional)

Whisk all the ingredients for the dressing until they have thickened slightly. Put aside

Combine all the salad ingredients except the sesame seeds in a salad bowl. Pour the dressing over the salad and toss it gently. Scatter the sesame seeds over the salad. Served 4.
